Vareniki homemade – general principles of cooking
Vareniki are loved by everyone, even those who deny it. Simply, many people have to give up this dish, because it is flour, and hence – high-calorie.
Yes, it is flour – this is the main ingredient of home-made dumplings. On it you can not save, use only the highest quality.
The flour must be sifted. Compulsory her companions are eggs and milk or water. After all, without these compound dough does not knead. Cooking it is recommended for a longer time: thoroughly crumple your hands and lightly pootbivat.
In the flour can be added salt, sugar, pumpkin, turmeric. And if you mix it with cocoa powder, you will get a chocolate dumpling. This dough is suitable if there is fruit inside the dish.

• 400 gr. flour;
• half a kilo of cherries fresh;
• 300 gr. Sahara;
• 45 gr. yeast;
• 15 gr. soda;
• 230 ml of water;
• 150 gr. cream;
• 15 gr. cinnamon;
Remove a stone from each cherry. To fall asleep with sugar, let it stand.

Yeast diluted in cold water, add flour, a little sugar and knead the dough. Do not touch it for about an hour. After mixing the bowl with the test must be covered with a towel.

Roll out not more than five millimeters thick. Cut shapes of the same size.

2. Vareniki home made pumpkin
• one and a half cup of flour;
• 300 gr. pumpkin peeled;
• a pinch of turmeric;
• 80 gr. butter;
• 300 gr. cottage cheese;

• one egg;
• two apples;
• 100 gr. sand of sugar;
• 0.5 liters of milk;
• 50 gr. sugar;
• five yolks;
• 10 gr. sugar vanilla.
Boil the pieces of pumpkin and put on a plate to cool.
Then grind them with a blender, turning into a puree. Add the egg and half butter to the pumpkin.
Turmeric, flour and salt mixed. Fall asleep in the pumpkin mass.
Knead the dough and set aside the container for about twenty minutes in a quiet and peaceful place in the kitchen.
Melt the remaining butter in the skillet, add sugar and make caramel.
Cut the apples into cubes and pour them into caramel. In a minute, add the raisins and cinnamon.
Mix the contents of the frying pan with cottage cheese.
Pumpkin dough to roll out and prepare circles for dumplings.
Place the cooled stuffing and dumpling vareniki.
Cook them in a little salted boiling water. Throw dumplings in it and gently pull it out after three minutes.

• 0.150 kg of mushrooms;
• half a cup of milk;
• 0.350 kg of flour;

We start the dumplings with the filling. Whole boil the peeled potatoes. Pulled it in mashed potatoes.
Dice the mushrooms and onions. Fry them in oil and add to a saucepan with hot potatoes. All the mix and leave to cool.

• 200 gr. flour;
• two yolks;
• half a cup of milk;
• 150 gr. brynza;
• tsp. salts;

Salt the sifted flour. Inside it, make a deepening. Add one yolk to the crater, milk (a little) and mix. The dough is well kneaded and set aside for fifteen minutes.

5. Vareniki homemade with cottage cheese and carrots

Carrot and leeks, cut into small pieces. Fry until soft.
Mix the wiped cottage cheese with vegetables. The filling must be completely cooled.
Prepare from the dough circles for dumplings, put the filling and top the flour product.

6. Home-made dumplings with potatoes
• 0,9 kg of flour;
• 150 ml of water;
• one kg of potatoes;
• 30 ml olive oil;
• two eggs;
• 50 gr. butter creamy;
• 0.150 kg of sour cream;
• salt and pepper – to taste;
• Eight branches of parsley.
Peel potatoes and cook. You do not need to cut it, except that the tuber is too big.
In the bowl, drive in eggs. Pour water and add, mix thoroughly with a whisk.

• 0,7 kg of dough;
• 350 g of pork
• two onions;
• 200 g of sour cabbage;

Cut the cabbage from the brine and crush it with a sharp knife. Then we’ll shift it into minced meat.
We add and pepper the stuffing. We mix everything with a wooden spoon.
The dough is prepared in the same way as in the previous recipe.
We roll it with a tourniquet and remember it. Then cut into the same pieces. Each small part of the test is flattened on both sides. Then roll out the rolling pin to two millimeters thick.
On the middle we will lay out the filling, we will protect the edges of the dumpling. Semi-finished products we lay on the dostuchku, sprinkled with flour.
When the water in the saucepan starts boiling, we throw in the billets and cook it as usual.
8. Home made dumplings “Strawberries in chocolate”
• three cups of flour;
• two liters. Art. cocoa powder;
• 0,25 l of kefir;
• two pinch of soda;
• vegetable oil;
• 0.1 liters of water;
• 300 gr. strawberries;
• granulated sugar.
Dilute cocoa in hot boiled water.
In kefir we will add soda, it there will be extinguished. We pour cocoa here, a spoonful of vegetable oil and stir well.
In the liquid mass, add the flour in a little bit and prepare the dough. It should not be steep.
Strawberries will be cut into four parts.
Turn the dough with a rocking chair into a layer three mm thick. Cut out the circles.
For each put a little sugar, and on top – strawberry stuffing. We blind the circles with a crescent.
Let’s cook the dumplings for a couple. It will take five or seven minutes.
